Bacon, Cheesy Toasties, Mushroom, and Caramelized Onion Soup 👌🧀

 

2 tablespoons of fresh thyme leaves or 1 teaspoon of dried thyme 🌿
For seasoning, add salt and pepper according to personal preference.
if you want it extra creamy, 1/4 cup heavy cream is a good choice.
On Behalf of the Cheesy Tomales:
Four pieces of hard-crusted bread, such as sourdough or baguette
One cup of shredded cheese, preferably Gruyère, Swiss, or sharp cheddar 🧀
1/4 cup of butter
Instructions:
Heat up the bacon:
To get the bacon crispy, place it in a big saucepan or Dutch oven and fry it over medium heat. Use a slotted spoon to remove the bacon and put it aside, reserving the cooking fat for later use.
Turn the Onions into Caramel:
In the same saucepan as the bacon grease, add the olive oil and butter. After approximately 20 to 25 minutes of stirring regularly over medium-low heat, add the sliced onions and simmer until they become golden brown and caramelized.
Assemble the Ingredients:
Put the stovetop on medium heat. After the onions have been sautéed, add the garlic and mushrooms. After 8 to 10 minutes of cooking, the mushrooms should be soft and have released their juices.
Pour in the white wine to deglaze the pot, if using. Pick up any chunks of browning that have fallen to the bottom. Wait three to four minutes for the wine to evaporate.
Put the Bacon, Broth, and Thyme into a saucepan and bring to a simmer. After the soup comes to a boil, lower the heat and let it simmer. The flavors will combine after around 15 to 20 minutes of cooking. Add seasonings according to your liking. If you would like a creamier finish, stir in the heavy cream.
Start by making the cheesy toast:
Get your broiler ready while the soup is cooking. Spread butter on a baking sheet and arrange the slices of bread with the greased side facing down. Generously top with cheese. Melt and bubble the cheese by broiling for two or three minutes. Keep a tight eye on it so it doesn’t burn.
To serve, spoon the soup into individual bowls and garnish with bacon bits. To top it all off, serve the soup with a cheese toastie or keep it on the side. Indulge in this comforting soup that is both meaty and warm.
