Soup made with mashed potatoes and ground meat.

 

List of ingredients:

2 tablespoons of olive oil
1 onion of medium size, chopped
2 garlic cloves, finely chopped
1 pound of ground beef or ground lamb
2 carrots cut into small pieces
2 pieces of celery, cut into small pieces.
1 cup of peas that are frozen
1 cup of corn kernels (fresh or frozen)
4 cups of beef broth
2 tablespoons of tomato paste
1 teaspoon of Worcestershire sauce
1 teaspoon of fresh thyme, or half a teaspoon of dried thyme.
Add salt and black pepper according to your preference.
1/2 cup of thick cream
4 potatoes of medium size, peeled and cut into small pieces.
Fresh parsley, finely chopped (for decoration)
For the mashed potato topping (if desired):
2 cups of mashed potatoes (you can add a spoonful on top if you like).
2 tablespoons of butter
1/4 cup of milk or cream
Add salt and black pepper according to your preference.

Instructions:

Prepare the meat for cooking. In a big pot or a large cooking pot, warm up 1 tablespoon of olive oil on medium heat. Put the minced meat on the pan and break it into small pieces with a spoon. Cook until it turns brown. Remove extra fat and put it to the side.

Cook Vegetables in a Pan: In the same pot, put the rest of the olive oil and cook the chopped onion, carrots, and celery until they are soft, for about 5 minutes. Add some garlic and cook for one more minute until it smells good.

Include broth and spices. Add the tomato paste, Worcestershire sauce, thyme, salt, and black pepper and mix well. Add the beef broth and heat until it starts to bubble.

Include potatoes and meat. Put the chopped potatoes and the cooked meat back in the pot. Cook the soup over low heat for 20-25 minutes, or until the potatoes are soft.

Include cream and vegetables. Add the thick cream, peas, and corn, and cook for 5 more minutes. Taste the food and add more salt, pepper, or other seasonings if necessary.

Potato topping that you can choose to add. To add a special touch to your Shepherd’s Pie, you can quickly make a mashed potato topping. In a small pot, heat up the mashed potatoes with butter, milk, salt, and pepper. Put a spoonful of mashed potatoes on top of each bowl of soup before serving.

Provide service: Put the soup in bowls and add fresh parsley on top. If desired, you can also add a spoonful of mashed potatoes.
